Chipotle Orange Shrimp

Summer BBQ, here we come! Orange is the perfect summer flavor and the Vitamin C protects your skin while you are grilling in the sun.

Spiced Hot Cocoa

This low-fat version of hot cocoa has a Mexican twist! I add lots of spices and a hint of chili pepper to give it that extra warm flavor.

Caldereta

caldereta

Caldereta is a thick stew seasoned with chilies. Serve this stew warm, it’s a filling and economic winter meal that stores well. Chilies keep the sniffles away and help you feel full longer, an added bonus when the winter winds blow

Black Bean Soup

Three hours is usually enough time for soaking the beans but you can boil them in water if you are in a hurry. I read in Mexican cookbooks that they never soak their beans – do so at your own risk!

Roasted Butternut Squash Soup

butternut-squash-soup

Butternut squash has a naturally, creamy consistency that blends into a thick and hearty soup without adding excess fat or cream. Make it fun for kids by topping it with plain, unbuttered popcorn!

Bloody Mary

bloody-mary

A favorite for Sunday brunch but don’t forget the fresh horseradish. It really makes this classic special!

Creamy Low-fat Asparagus Soup

This soup looks absolutely sinful and feels just as rich on the taste buds without being loaded with heavy cream.

Charlie’s Chai

chai

I call this tasty drink “Charlie’s” Chai named after my former staff photographer. Charlie’s face lit up when I offer to prepare a batch during a long day of shooting. Chai is a hot tea beverage that comes from India, deliciously sweet and spicy. Its rich flavor is a great substitute for coffee addicts trying to kick the habit! If you want to have a cup each morning, brew triple the batch and store in an air-tight container in the fridge for up to one week.

Gazpacho with Shrimp

gazpacho-shrimp

Soup fights hunger because it’s filling and low in calories. This is the perfect summer/spring soup made in a blender. Fresh and light, gazpacho can be packed for lunch in a thermos, for an impromptu picnic or even for a day on the beach. Add cooked shrimp to round it out for a fast, late-night dinner when you don’t have time to cook.
