Almond Raspberry Beet Smoothie

Naturally sweet beets are a wonderful flavor and color pair to raspberries. No need to cook the beet first, just wash well and grate it on a box grater.

Serves 1


1/2 cup raspberries
1/2 cup grated beet
1/2 cup plain kefir or plain Greek yogurt
1/3 cup vanilla whey protein powder
2 tablespoons almonds
1/4 teaspoon almond extract


Place all ingredients in a blender along with 1/2 cup water and process until smooth. Serve immediately.

Note: If you’re using Greek yogurt, add an additional 1/4 cup water

Swaps and Substitutions

  • Swap the coconut milk, almond milk or kefir for low-fat milk.
  • Swap the yogurt or kefir for soy yogurt or culturecoconut milk.
  • Swap almonds for ground flax or hemp seeds.
