Spinach Bacon Salad


Are you surprised to see bacon on a healthy eating plan?? Well a bit of bacon is ok from time to time, especially when you pair just a few slices with super nutrient rich ingredients like spinach! Think “mini” when you want enjoy things like butter, bacon and cheese and always pair them with calorie friendly super nutritious vegetables.

Serves 1


2 hard boiled eggs, yellow discarded
2 cups baby spinach
2 slices bacon, chopped
2 teaspoons vinegar
1/4 red onion, thinly sliced


Chop the egg and add it to a bowl along with the baby spinach. Place the bacon in a small cold skillet. Warm it over medium heat. Cook the bacon 2 to 3 minutes, stirring often until the bacon is crisp. Transfer it to the bowl with the spinach. Turn the heat off. In the skillet that contained the bacon add the vinegar. Using a wooden spoon scrap up any bits of bacon sticking to the bottom of the pan. Pour the hot dressing over the green and toss. Serve immediately.

  1. where does the onion get added? raw on the salad or cooked in the bacon dressing?
